I once heard a quote, that the true art of cooking is transforming healthy foods into a delicious meal for the purpose of bringing people together.  That pretty much sums up my philosophy about cooking.

This week in honor of Cinco de Mayo we are bringing you three delicious, fast, easy, and healthy recipes for a fiesta.  Each day we will be sharing a new recipe that tastes amazing on its own and can be incorporated into one delicious main dish.  Along the way, we will share time-saving hacks, for those in a time crunch.

First up is Mango Pico de Gallo!



While the base recipe is very easy (it just requires a lot of chopping) to make it even faster you can buy pre-made pico de gallo and add the mango, cilantro, and lime juice.
