Today is the day we put together all of our recipes for Cinco de Mayo into one delicious, fast, easy, and healthy meal. Who says you can’t have it all? The past few days we shared Mango Pico de Gallo, and Creamy Cabbage Slaw now we get to put them together with our Fiesta Fish Tacos with Bacon. Yum! On to the recipe!
For this recipe, I wanted the fish to have some of that amazing bacon taste but didn’t want to take the time to cook them both separately. Enter our latest kitchen hack: using a cooling rack to cook the bacon over the fish. Maximal time saving and maximal bacon taste? Yes, please!
